The seafood dish consists of prawns and scallops wrapped in minced fish and steamed, then covered with a thin rice crepe made of rice flour, potato starch, and cornstarch mixed with water and served with a refreshing fish sauce. The main beef tenderloin is roasted over high heat during preparation, then boiled and strained, and simmered for an hour in strained broth, red wine, dark soy sauce, Hakkaku (Chinese herb), cumin and other seasonings.
