Rikishi Miso is primarily a food enjoyed during the Sumo Association's summer tour, and its flavor varies by stable. It is a favorite among rikishi (sumo wrestlers), gyōji (referees), oyakata (stable masters), yobidashi (ushers), and tokoyama (hairdressers), and even when appetite is lacking, just having rikishi miso and rice provides ample nutrition. It can be enjoyed with rice, on cucumbers, or eaten directly with a drink in hand. It is also delicious when used in miso-nikomi udon! You can choose from two types: sweet and spicy.
The tender beef offal made from beef sourced from Shibaura is best enjoyed with plenty of green onions.
