Tokyu Hotels has taken in the food culture of Toyama, Kanazawa, and Matsue, which are located on the Sea of Japan coast. Inspired by fermented foods, which are believed to be good for one's health, Chef Hideki Tajima has created a French course from his own unique perspective.
