This is a special junmai sake made with 100% Gifu Prefecture's sake-brewing suitable rice 'Hidahomare'. It is an unfiltered nama genshu that is bottled as is after pressing during the extreme cold season, without sterilization or flavor adjustment.

In partnership with Terlato Wines, he releases wines under his own name. The label features his nickname 'Golden Bear.' The Cabernet Sauvignon is aged for 18 months in French oak. It has a deep garnet color and exhibits the characteristics of Napa Cabernet, with nuances of cherry and plum reminiscent of cedar. The fusion of fruitiness and spiciness is remarkable. This historic chateau has been owned by many notable figures since the 13th century, but it is said to have been on the verge of collapse until the Lipschitz couple acquired it in 1962. However, since the change of ownership, a major transformation has taken place, and it has been beautifully reborn. The vineyards are located on a gentle slope from an elevation of 19 meters, in well-drained land where grapes are cultivated. All grapes, which yield an average annual production of 230,000 bottles from 45 hectares of vineyards, are hand-harvested. The usage rate of new barrels during aging is 60%. The aging period is 12 to 18 months. The new owners, the Lipschitz couple, promptly replanted the grapevines and completely renovated the winemaking facilities that had become outdated. 'Le Zalm' refers to the white flower known as 'Dutch Iris' (also called Color) that blooms by the pond of Lagrange, indicating that it is also a fragrant wine. The first release was in 1996, and both fermentation and vinification are carried out with a new barrel ratio of 80-90%, resulting in a luxurious taste! Sanford is a winery established in 1971 in North Coast Santa Barbara County. At that time, there were few wineries in Santa Barbara, and it was not recognized as a quality region for Pinot Noir and Chardonnay as it is today. In this context, Sanford was convinced that Santa Rita Hills was suitable for growing Pinot Noir and Chardonnay, just like Burgundy in France, and began grape cultivation. The 1976 vintage was highly praised, and the name Sanford became well-known along with Santa Rita Hills. Since then, both Sanford and Santa Rita Hills have developed significantly, and in 2001, Santa Rita Hills was designated as an American Viticultural Area (AVA). The style of Sanford features full-bodied fruit flavors and well-balanced acidity, enriching and elevating meals.
