Using handmade black koji from Kuroki Honten and Ozuki Mountain Distillery, along with locally sourced golden sweet potatoes from our own farm, we are committed to using the sweet potatoes harvested on the same day. Yeast is cultivated in traditional jars and aged for over two years, resulting in a mellow flavor.
Nishi Brewery, even when opened, it does not have the conventional sweet potato aroma; instead, it has a citrus scent reminiscent of lemon and mandarin. There is no roughness or bitterness, and a soft roundness spreads in the mouth.
Miyake Shuzou Yakushima is registered as a World Natural Heritage site, and spring water from the selection of the top 100 famous waters flows here. It's even better when served with hot water.
Made from locally grown barley and barley sourced from Kyushu, it is brewed with our own cultivated yeast, resulting in a refreshing flavor and umami that spreads.
This shochu is brewed in accordance with the tradition of the Iki Shochu Cooperative, using a ratio of 2 parts barley to 1 part rice koji, and is distilled under reduced pressure and filtered through charcoal.
