Delicious Food, Japan. This is the new approach to “locally produced, locally consumed” cuisine proposed by Nangoku Shuka. Among the ingredients cultivated to suit each region’s climate and soil, there are many that do not make it into mainstream distribution channels due to the difficulty of cultivation or high costs. At Nankoku Shokya, we personally travel to discover, taste, and carefully select these little-known ingredients, and present them to you as a new style of Chinese cuisine unique to Nankoku Shokya. This is Nankoku Shuka’s vision of “local production for local consumption”: “Delicious Japan.” This time, we’re bringing you the “delicious flavors” of Akita.

Mao Crab Tea is produced in Anxi County, the same region as Tieguanyin. The name is said to derive from the shape of the tea leaves and the tea tree. The branches extend sideways, resembling crab legs, and the edges of the tea leaves are jagged with small fine hairs, which evoke the legs of Shanghai crabs. It has a pleasant aroma, with a lingering roasted fragrance and good aftertaste, and is highly regarded as a well-balanced tea among oolong teas.
Compared to regular oolong tea, it contains more polyphenols, resulting in a richer flavor and color, hence the name black oolong tea. This black oolong tea is based on Fujian province's oolong tea (Da Hong Pao variety) blended with Pu-erh tea, making it a tea that pairs well with Chinese cuisine. By blending aged Pu-erh tea, it contains a higher amount of 'oolong tea polymerized polyphenols' which effectively suppresses fat absorption, thereby helping to reduce the rise of neutral fat after meals.
Pu-erh tea is a type of tea that has been fermented through a special process, containing unique components such as pu-erh polyphenols and polymerized catechins. It is also famous as a diet tea. Additionally, those that have been aged (aged) are considered to be precious. It pairs very well with oily dishes and is an essential tea in dim sum culture, particularly favored in southern China, including Guangdong and Hong Kong.
A representative oolong tea from Taiwan, lightly roasted in the 'Qing Xiang' style. It is said to have originated about 150 years ago during the Qing Dynasty when a person named Lin Fengchi brought back 12 tea trees from Fujian Province as a commemoration of passing the imperial examination and planted them in Lugu. This tea is praised for its greenish golden color, mellow flavor, and floral sweet aroma, making it well-known even in Japan.
This tea is Tieguanyin made in Taiwan using the traditional method brought from its hometown, Fujian Province. The variety, production method, and roasting are all crafted by skilled artisans following tradition. The fragrant aroma and rich aftertaste brought out by the masterful roasting are unique to Taiwan's Muzha Tieguanyin. Due to the use of traditional techniques and the long time required for production, it is now a rare tea with high value.
Rooibos tea, a specialty of South Africa, has become a staple drink for beauty and health in Japan. Rooibos tea, which contains components that remove active oxygen believed to be a cause of aging, is highly regarded. Enjoy this beauty skin tea, which is based on rooibos tea and includes dokudami, known as a universal remedy for skin troubles, along with rose petals, which are very popular among women for their anti-aging properties.
This tea is an original blend featuring ginger, known as a symbol for warming the body, dried tangerine peel (orange) for fatigue recovery, and cinnamon for its expected sweating effects, all combined with Keemun black tea, which has a high fermentation level and warms the body. It is particularly recommended for women due to the rich flavor of Keemun black tea.
This black tea is characterized by its subtle sweetness, made using the juice of 'lychee', which is said to have been favored by Yang Guifei, and flavored with 'Yingde Black Tea' from Guangdong Province, China. It is said that black tea has a warming effect on the body, and Yingde Black Tea is also said to have a higher polyphenol content compared to other black teas. The fruity aroma and natural sweetness of lychee blend with the rich flavor of Yingde Black Tea, making it an enjoyable tea for relaxation.
