Shochu made only from carefully selected barley, barley koji, and pure water. This shochu, made with 100% barley for both ingredients and koji, was the first attempt of its kind in Japan. The pressure-reduced distillation suppresses the strong characteristics of shochu and fully brings out the sweetness of the barley. The name was chosen with the aim of creating such sake by Masakatsu Fujioka, the fifth generation president of the sake brewery. There is a story behind the establishment of this brand and his journey as a toji (master brewer) in sake making. Once, as a mid-sized brewery in Fushimi, it was sold nationwide under the brand name 'Banchou', but production was halted in 1995. During that time, he honed his brewing techniques at the National Research Institute of Brewing and other sake breweries, and in 2002, he made a fresh start. The shipping volume, which was several thousand koku during the 'Banchou' era, was only 28 koku this year. With a small craft-style facility, he is dedicated to careful sake making, and the sake, true to its name, has gained a reputation for its soft and clear drinking experience.

60% polished rice for celebration in Kyoto. When the toji (master brewer) entered the brewery, they had not yet created the kimoto method, but they revived it. This is a product that the toji is passionate about and puts great effort into. It is said to be the first in this region to revive the kimoto method. Careful attention is paid to brew it in a way that brings out the characteristics of yeast number 6. Aiming for a sake that complements meals, it has a gentle flavor without any strong characteristics while using the kimoto method. It is recommended to serve chilled to 55°C. It pairs well with elegant dishes, as well as light white fish and soups.
The Saito family began their sake brewing business in the 28th year of the Meiji era. The Saito family had been operating a kimono business in Fushimi since the Genroku period, but during the significant societal changes of the Meiji era, the 9th generation Saito Sotaro transitioned from the kimono business to sake brewing. At the time of its founding, they sold under trademarks such as 'Yanagimasamune' and 'Ootaka', but in the 4th year of the Taisho era, to commemorate the enthronement of Emperor Taisho, they adopted the current representative trademark 'Eiketsu'.
