Black koji brewing. It has a solid body, and when mixed with hot water, you can enjoy a rich aroma and deep flavor. The steam rising from the glass tickles the nose with a fragrance that is refreshing and crisp, just like the aftertaste. This is a refined version of the classic sweet potato shochu. Start with it mixed with hot water.
Carefully selected sweet potatoes are brewed with yellow koji. It is extremely delicious on the rocks or with water. It has an aroma reminiscent of muscat grapes due to low-temperature fermentation, and when you taste it, you can fully appreciate the sweetness and umami of the sweet potatoes. We aimed for a shochu that fits well at a quiet bar counter.
Created with the thoughts of the 'maker', 'communicator', and 'drinker' in mind.
Carefully selected high-quality sweet potatoes (Kogane Sengan) are meticulously sorted, removing all unripe and damaged ones by hand. Additionally, the water used for preparation is natural water that springs from several hundred meters underground in the volcanic ash soil (Shirasu plateau) unique to Kagoshima Prefecture. The base original liquor, which has been distilled and aged slowly, is finally blended with a strong-tasting young original liquor to create the product named 'Red Hare.' By the way, 'Red Hare' is the name of a famous horse that appears in the Romance of the Three Kingdoms, said to run a thousand miles in a day.
