We process fresh, high-quality whole chickens delivered daily by our procurement manager, Kazushige Abe, who specializes in Hinai chicken. Although this method is labor-intensive and often avoided, we are committed to in-house preparation to provide freshly skewered chicken at its peak maturity. While the whole chicken preparation limits the available cuts, it allows us to offer rare parts, so you can try unique grilled chicken skewers.
