Mangen Pork is raised for an additional 30 days beyond the standard rearing period of 170 days, allowing it to develop the natural flavors of the pork. The Himuro Pork, aged using 'cold temperature maturation,' has a fresh, moist, and tender texture, and is grilled to perfection with Kishu Binchotan charcoal and natural salt. The salt used is Himalayan rose salt, a rare secret salt hand-mined from the Andes Mountains. Rich in iron, calcium, and minerals, it enhances the quality of the ingredients with its deep umami flavor. The slowly oozing fat is exceptionally delicious!
