Salon is a Champagne house founded by the first head, Eugène Aimé Salon, who was an ardent Champagne enthusiast. In the realm of Champagne, where blending crus and varieties is the norm, it was born out of the desire to create the finest original Champagne from a single variety (Chardonnay) grown in a single cru of a single vintage. It was first crafted for personal consumption in 1905, but its high quality garnered a reputation, leading to the establishment of the house and the start of sales in 1920. In the 1920s and 30s, many prestigious establishments, including the Michelin-starred restaurant Maxim in Paris, selected it as their house Champagne. It quickly captured the hearts of the wealthy of the time, and the allure of Salon spread worldwide.

Founded by Jacques Bollinger in 1829, Bollinger is a prestigious Champagne house that bears his name.
