A standard bottle of Mutsu Hassen, this is a classic. Among the series, it has a particularly gentle flavor, but it is still unmistakably Hassen. It is rich and full-bodied with a gentle umami that overflows, yet the aftertaste is clean and refreshing without any off-flavors. A refreshing sweetness spreads, and the aroma is elegant and calming.
Rice grown with the pure holy water of the Dewasanzan mountains, along with the 'Dewasanzan Deep Water' that springs within the brewery, gives this sake a rich umami flavor. It is handcrafted junmai sake made using the same method as the sake submitted to competitions, employing the 'issho mori koji kabuto' technique. This is a rich and delicious sake that balances a soft flavor, transparent umami, and a clean finish.
The aroma is refreshing with a hint of ginjo fragrance. The mouthfeel is very gentle, and there is a sense of elegance in the lingering aroma. There is no sharpness at all, and the taste is rounded, well-balanced, and has a moist drinking experience. Despite being a namazake (unpasteurized sake), it has a good balance that does not feel heavy, making it easy to drink.
A crisp, dry junmai ginjo sake that pairs well with wine glasses. It is better described as dry rather than just sharp, showcasing a clean and refined junmai ginjo. It boasts a refreshing mouthfeel, a light stimulation, and a clear umami flavor. When warmed, it reveals a pleasant sweetness. If pairing with Western cuisine, try it chilled in a wine glass.
We want to create a sake that satisfies everyone. This is the sentiment behind the creation of 'Seven Samurai.' Like the premium sake 'Rashomon,' it is named after a film by a certain popular director. Moreover, it is 'Seven Samurai,' which is respected by movie fans and industry professionals around the world. You can feel the strong desire to become a presence that is recognized globally, just like this film.
This is a junmai sake from the limited brand 'Shichida' of the local sake 'Tenzan' from Saga Prefecture. It has an aroma reminiscent of fully ripe fruits and a rich flavor with a solid drinking experience. As it is unfiltered raw sake, the alcohol content is slightly higher, and it can be delicious with ice added according to your preference.
Mizubashō is a representative sake from Gunma. The 'Junmai Dry Sparkling Sake' is the base for the world's first sake champagne, Mizubashō Pure. It has a taste reminiscent of the clear waters flowing beneath the ice and snow of Oze in early spring. The refreshing fizz is pleasant on the palate, and its dry flavor makes it popular as a food pairing sake. White 'lees' dance inside the bottle.
A new sensation sparkling sake, 'Mio', from Shōchikubai Hakubai Brewery, featuring a moderate acidity and a hint of sweetness. With low alcohol content, it is easy to drink and perfect as an aperitif, offering a refreshing effervescent experience.
The history of Kirishima Distillery began with shochu made from black koji. 'Kuro Kirishima' recreates the flavor of the original black koji brewing using state-of-the-art equipment and our unique brewing methods. The deliciousness brought out by black koji is characterized by a rich sweetness and a crisp finish. This exquisite taste is crafted from over 90 years of tradition and exceptional skill at Kirishima Distillery.
After much trial and error to bring out the black koji of the whale, we have created 'Kujira Black Koji Shikomi' with the unique aroma and crisp flavor characteristic of black koji. The sweet potatoes used are Kogane Sengan and Beni Otome, and the koji is made from Kawachi G-type black koji mold, distilled under normal pressure to create sweet potato shochu. It can be enjoyed deliciously on the rocks or with hot water.
Using sweet potatoes of the varieties Kogane Sengan and Benio Otome, we carefully fermented them at low temperatures and distilled them under reduced pressure to achieve a smooth sweetness, a vivid aroma, and a refreshing throat feel. We use Tarumi hot spring water 'Juzuru'. This shochu is popular among women and pairs well with on the rocks, diluted with water, or served cold straight.
A basic sweet potato shochu from Sata Soji Shoten that captivates many shochu fans. Made using the Kogane Sengan sweet potatoes cultivated under contract in Minamisatsuma's Ei Town and natural underground water, it is brewed with white koji and distilled under atmospheric pressure. It has a soft and light aroma, a refreshing and clean aftertaste, and a lingering finish, offering a somewhat urban and sophisticated flavor.
The all-potato shochu 'Ikokukata' <Red> is a genuine shochu made from 100% red sweet potatoes (Kintoki potatoes) sourced exclusively from southern Kyushu. It features a rich aroma and a smooth, refreshing taste characterized by the abundant sweetness derived from high-quality potato koji.
Using yellow koji, it has a light mouthfeel that suppresses the aroma of sweet potato shochu. This shochu is made in the same way as ginjo sake, and by using yellow koji, it achieves a soft finish with a fruity ginjo aroma that does not evoke the taste of sweet potatoes. Although it is a sweet potato shochu, it is crafted to aim for a shochu that is free from the typical characteristics of sweet potato shochu.
