The aftertaste is rich and savory, leaving a lingering finish that makes you involuntarily whisper 'delicious.' This Champagne is made from grapes grown in the village of Gueux, neighboring the village of Vrigny. With a clear golden appearance that shines, thanks to long-term bottle aging, the bubbles are persistent and have a fine, smooth texture. It features a freshness of citrus and a mineral aroma reminiscent of wet stones. Over time, notes of ripe apples, mature persimmons, peach compote, as well as aged aromas like gingerbread, honey, mushrooms, and café mocha emerge, adding complexity to the fragrance. The mouthfeel has a very fine, smooth touch of bubbles, with a refreshing and robust acidity balanced with fresh, concentrated fruit flavors, and a savory quality, leading to a very long finish. The after-flavor reveals a milky impression similar to café mocha. It is very complex and the aroma changes significantly over time, so it is recommended to pour it into a tulip-shaped glass that allows for expansion. This champagne is best enjoyed by gradually increasing the temperature from around 10 degrees. Grape varieties: 70% Chardonnay, 20% Pinot Noir, 10% Saignée. Dosage: 2g/L.
