This champagne is made from grapes sourced from the village of Gueux, neighboring the village of Vrigny. While it can be enjoyed as a dessert wine, it also pairs perfectly with dishes, creating a harmonious Champagne. With a clear golden appearance that shines, thanks to long-term bottle aging, the bubbles are persistent and have a fine, smooth texture. It features fresh citrus and a mineral aroma reminiscent of wet stones. Over time, notes of ripe apples, mature persimmons, peach compote, as well as aged aromas like gingerbread, honey, mushrooms, and café mocha emerge, adding complexity to the fragrance. The mouthfeel is characterized by very fine bubbles with a smooth touch, well-balanced with refreshing, robust acidity and concentrated fruit flavors, along with umami, leading to a very long finish. The after-flavor reveals a milky impression similar to café mocha. It is highly complex and the aroma changes significantly over time, so it is recommended to serve it in a tulip-shaped glass to enhance its fullness.
