The long-established salt wholesaler 'Mei En' (founded in 1554) along Shikendo is using their recommended salt 'Crystal Rock Salt' in cooking. This rock salt is a naturally produced crystal rock salt mined from the salt layers 400 to 700 meters underground in the rich natural land of Germany. Its very straightforward and mild flavor enhances the umami of the ingredients.
