This course is available only for lunch. Shabu-shabu is Okinawa's famous Agu pork served in a homemade special salt broth. You can choose your favorite of Miyako soba or zosui (rice porridge) to finish the meal.
This shabushabu set uses a special salt soup stock made by blending several kinds of Okinawan salt and mixing them with aromatic Japanese soup stock. The main ingredient is Agu pork, an Okinawan brand pork characterized by its rich sweetness and tender fat. A heaping pile of cabbage is served in the shabu-shabu to accentuate its sweetness, and mozuku seaweed from Miyakojima accents the dish with a unique texture and the aroma of the sea. In addition, the addition of firm and satisfying island tofu makes this a dish with excellent nutritional balance.
