The 'Gasa Ebi' (official name: Kurozakoe Bi) is a precious ingredient caught in Shonai Bay, which is not widely distributed outside the Sakata area. Although small, it has a very strong umami flavor and has been used in home cooking locally for a long time. In our restaurant, we generously use this Gasa Ebi, carefully simmering it with the shells to concentrate the flavor. We enhance the aroma with fragrant vegetables and brandy, finishing it smoothly with fresh cream. When you take a bite, the rich, roasted shellfish aroma spreads first, followed by a gentle sweetness. It is one of our specialties that has received great acclaim from customers visiting for tourism and travel, who say, 'You can only taste this here.' This recipe has been passed down since our establishment in 1974, allowing you to fully experience the bountiful blessings of the rich sea of Shonai.
Crème brûlée, a popular dessert that adorns the end of a meal, is a dish where the difference in ingredients and technique is highlighted due to its simplicity. It features a smooth custard made with rich egg yolks and fresh cream, enhanced with a refined vanilla aroma, and is slowly baked at a low temperature. The caramel that covers the surface is made by caramelizing sugar upon order, creating a crispy texture. When you take a spoonful, the slightly bitter flavor of the fragrant caramel and the melting cream spread in a perfect balance. Enjoy the sweetness that allows you to take a breather at the end of a sightseeing trip or a special dinner. This is our signature classic dessert, aiming for a light and never-boring flavor while preserving the traditions of French cuisine.
This classic French dish, 'Boeuf Bourguignon', uses luxurious cuts of domestic beef shoulder, slowly braised with red wine and aromatic vegetables. At our restaurant, we take over 7 hours to carefully cook it until the fibers are tender and fall apart. By taking the time, the umami of the meat harmonizes with the richness of the red wine, creating a deep flavor. The sauce is concentrated with the beef's umami, making it a perfect match with bread. This dish, crafted with years of honed skills, continues to be loved across generations and is especially chosen by tourists as a 'memorable dish from their travels'. It is a remarkable dish that enriches the journey in Yamagata, alongside the seafood from Shonai.
We offer fresh fish caught in Shonai Bay, prepared as carpaccio or marinated according to the day's catch. Unlike simple Japanese sashimi, the French style enhances the natural flavors of the fish by combining it with olive oil, herbs, and citrus. The recommended fish varies with the seasons; in spring, we have sea bream, in summer, rock oysters and sea bass, in autumn, Spanish mackerel, and in winter, cod and flounder, allowing you to enjoy the rich blessings of Shonai's sea throughout the year. Visitors on sightseeing trips are often surprised to find that they can taste French-style sashimi in Sakata, making this a unique dish of our restaurant. Through the diverse seafood of Shonai Bay, you can experience the unique flavors of this region.
Among the highly rated 'Yamagata Beef' known nationwide, we carefully select sirloin that balances flavor and tenderness. The finely marbled texture and the deliciousness of the lean meat provide a melt-in-your-mouth sensation and deep flavor the moment it enters your mouth. At our restaurant, we simply grill it with salt and pepper to bring out the true appeal of the meat. The side dish features seasonal vegetables from the local Shonai area, creating a plate that allows you to experience the blessings of the region. This main dish is perfect for special meals during sightseeing or anniversaries, and it pairs excellently with wine. It is a dish that many customers choose as something they definitely want to taste when visiting Yamagata.
