We blend Kyoto's Saikyo miso with Kyushu's awase miso to create a rich and smooth soup.
This is a salt-flavored motsunabe based on a soup carefully made from chicken bones, allowing you to fully appreciate the umami of the offal. It also goes well with ponzu and yuzu pepper to your liking.
These are original champon noodles developed in collaboration with the long-established noodle shop 'Kitamura Seimen' in Hakata, designed to pair well with motsunabe.
Mainly uses tender and lean tenderloin meat.

For two people, the price is around 2000 to 3000 yen for small to medium sizes. For three or more people, 3500 to 4000 yen is just right. If the squid is larger, we will discuss both the price and size. The types of squid available at our shop vary by season. From summer to autumn, we have spear squid, and from autumn to early spring, we have water squid. During the short period from spring to summer, we expect to have bamboo squid. Due to the high price of larger squid, our staff may recommend serving half or in portions. Please understand that the availability of squid may be affected by weather conditions and rough seas, resulting in fewer or no arrivals. *A fee of 100 yen per person will be charged for preparation.
Sesame mackerel is a local dish from Fukuoka, consisting of sashimi made from sea bream mixed with sesame sauce and condiments. We only use freshly caught mackerel that is prepared on the same day, and we confidently provide it with both freshness and quality.
