Our second most popular menu item following our sashimi platter! Made with ground meat of premium fish, Kyushu-produced sea bream, steamed upon order and served fresh. We believe that many of our customers who enjoy processed foods with Japanese sake are left-leaning, so we mainly offer high-end Japanese sake and local sake. Instead of using cheap ground meat, we use premium sea bream to create a rich flavor, which pairs perfectly with the Japanese sake selected by our restaurant. Enjoy it as a side dish with your drink.
A rare menchi katsu made with beef tongue. Seasoned simply with salt, pepper, and lemon sauce, similar to grilled beef tongue. Unlike the usual way of eating menchi katsu with sauce that makes you crave beer or highball, this dish pairs well with sake.
We offer daily changing dishes made with local Kyushu vegetables, prepared simply through methods such as raw, marinated, pickled, grilled, boiled [ohitashi], simmered, fried, etc. The delicate umami and kindness of the vegetables pair excellently with the premium junmai daiginjo sake selected by our restaurant! This is a fresh version of the famous Karasumi from Nagasaki. We source our Karasumi from [Matsuko Shoten]. It is a rare delicacy that pairs perfectly with Japanese sake. For a finishing touch, try our [Karasumi Udon], where we boil premium dried udon noodles from Kyushu and mix them generously with fresh Karasumi. (Additional 980 yen)
In Kyushu, there has been a culture of eating whale since ancient times. Was there a tradition of eating it in other regions as well? At my training place, the specialty dish was whale sashimi, so following that, we also offer whale sashimi at our store. It is a very simple yet delicious ingredient. In the southern part of Fukuoka Prefecture, in the Kurume and Yanagawa areas, there are many waterways and the Ariake Sea, and there is a custom of eating eel dishes. Eel restaurants are still in business. When it comes to grilled fish that goes well with sake, eel dishes come to mind first. This is a good-sized 400g class red tilefish caught in the Japan Sea near Kyushu. It is simply salt-grilled or simmered using seasonings from Kyushu, resulting in a sweet and flavorful taste with a glossy finish similar to teriyaki, thickened with soy sauce. In Eastern to Northern Japan, the main dish is typically [kin-ki], while in Western to Kyushu, [red tilefish] is more common. It is exceptionally delicious with a rich fat content. Please enjoy this opportunity. Suimono is a representative local dish of Fukuoka. While there is the goodness of eating it at a specialty store, the owner originally worked at a chicken cuisine restaurant, so you can enjoy delicious suimono here. We also pay attention to the lineup of sake at our store, so you can enjoy it with local sake. Of course, we also focus on ingredients such as chicken and eggs from Kyushu, as well as vegetables, to help add color to your enjoyment of Fukuoka travel. Please enjoy. In the Ogori area of central Fukuoka Prefecture, there are many irrigation ponds scattered around for agricultural work, and during the winter, it is said that ducks flying in come to rest their wings. There is a tradition in the Ogori area of catching and eating these ducks, so there have been restaurants serving duck dishes since ancient times. We have prepared a duck hot pot that interprets such a culture in a Sakamine way. It is made with plenty of green onions and watercress, so you can enjoy plenty of vegetables. Duck dishes go perfectly with Japanese sake! It is a classic combination at soba restaurants. In Fukuoka, there are few soba restaurants and duck cuisine shops, so there are few opportunities to eat duck, but it is well received by locals. Please enjoy it.
