It is widely known that the source of the umami in 'katsuobushi' (dried bonito flakes) is 'inosinic acid', which is a component of DNA. When you consume katsuobushi, the inosinic acid enters your body, activating cells and promoting metabolism, making it said to help prevent catching colds. Additionally, when the umami component of katsuobushi, inosinic acid, is combined with the glutamic acid from kombu (kelp), they enhance each other's umami, leading to an expected 'synergistic effect of umami'.
