Thick fibers of shark fin and hammerhead shark fin. Entwined with an ultra-rich collagen sauce. Updated daily, created by Chef Hayashi Toshi's sensibility and logic, this is the 'absolute original.' The sauce is transformed into soup, concentrated into a single bite of Xiao Long Bao. So rich that collagen remains on your lips, dominating your mouth with umami. It is now—'violently addictive umami.' (No suspicious drugs are included, haha.) The dumpling is crafted by the dim sum master, Mr. Chen. The moment the skin breaks, hot soup bursts out, melting your heart. However, there is one request. To deliver the meticulously crafted flavor of this Xiao Long Bao, Chef Hayashi Toshi himself prepares the soup and serves it fresh. Therefore, it will only be available before the opening of Toshi, from 17:00 to 18:00. This is to ensure you experience not just the name 'Toshi,' but 'Toshi' itself.
Named Pekichiki, this dish is inspired by the famous Beijing Duck, a culinary masterpiece born from 4,000 years of Chinese history. The idea was to create a more accessible version of this renowned dish using Japanese ingredients, leading to the creation of Pekichiki. The chefs behind this dish are W Yoshida, Hayato Yoshida (Hayato), and Hiroaki Yoshida (Private Kitchen Yoshida). The chicken used is a brand from Yamanashi Prefecture called 'Shingen Chicken,' which is not only raised to be delicious but also to ensure a delightful eating experience. The skin is perfectly roasted, achieving a wonderful balance with vegetables and miso. This new dish is a modern evolution of Beijing Duck, combining the essence of Chinese and Japanese ingredients. To finish, we lightly coat it with fragrant rose liqueur, layering the aromas for a rich flavor. Just before serving, the chef will carefully cook it right in front of you, maximizing the sweetness and umami of the shrimp. The heat brings out the aromas of Shaoxing wine and rose, stimulating your appetite, and as it enters your mouth, the fragrance spreads gently, leaving a rich yet refined aftertaste.
