This lunch course includes both fish and meat dishes. Please enjoy a course meal with a sense of the season using seasonal ingredients in abundance. You can choose a toast drink from the list. Alcoholic and homemade non-alcoholic pairings are also available.
We offer a monthly course menu that expresses the changing of the seasons in each dish, lavishly using seasonal ingredients. We offer drink pairings that can be enjoyed with each dish to complement the cuisine that carefully draws out the individuality of the ingredients. Each dish is accompanied by your choice of one of three types of drinks: whiskey, wine, or non-alcoholic beverages. Please enjoy the overlapping flavors and changes in the lingering aftertaste by freely choosing your favorite combination. We will also offer a tasting of "Newborn Whiskey Yofu" which is currently being aged in barrels. You will be able to enjoy the unique expression of this moment. ● 'Hyogo Prefecture, Yabu Distillery' uses clear streams polished by rich nature as brewing water. Known in English as mother water, this brewing water plays an important role in determining the quality of the whiskey. Surrounded by nature, Yabu Distillery uses the clear streams from Fujimuna Mountain (elevation 1139m), which is part of the Ice Mountain range, as its brewing water. Additionally, Yabu City, known for its beautiful mountains and heavy snowfall, is a region with significant temperature differences, making it one of the most distinctive areas in Japan with rich seasonal changes. The rapid temperature fluctuations enhance the whiskey's maturation process, making it more intense. ● About 100 years since the birth of Japanese whiskey. Yabu Distillery has faced head-on the common belief that 'the deliciousness of whiskey is determined by the length of the aging period,' pursuing flavor. 'By refining the raw spirit, we aim for a more intense barrel aging.' While the passage of time is constant, the results can be vastly different; whiskey is now judged not by the time elapsed but by its essence. Whether to live ordinary days or to look to the future and continue to challenge one's limits. We want those who continue to take on new challenges, free from preconceived notions, to experience this. ● Innovative filtration technology using Idemitsu Kosan's patented technology. Whiskey undergoes barrel aging to remove off-flavors and immature odors. This process can take years, but Yabu Distillery has optimized the storage period by adopting innovative filtration technology that removes off-flavors and immature odors even before barrel aging. *Scheduled for release in October 2026.
