The fish dish (sea bream) in the "B Course", which offers two main dishes, has been upgraded to an abalone dish. We hope you will enjoy this special dish filled with the season's delicacies.
Table seating is available. Reservations are required due to the careful selection of ingredients. Please make a reservation at least one day in advance. Uzura-tei is a famous restaurant that has been serving Mizutaki (chicken stew) since the early Showa period (early 20th century). We have passed down the traditional taste of mizutaki from generation to generation, and even after the renovation to Maison de Vin Uzura-Tei, you will still be able to enjoy the same great taste of the restaurant. We hope you will try it.
At our restaurant, we offer dishes that enhance the enjoyment of over 800 types of wine. These are 'French x Japanese' dishes that combine French ingredients such as 'butter', 'cheese', and 'olive oil' with Japanese cuisine that values seasonal ingredients. The sources of our ingredients include Hungarian 'foie gras', vegetables sourced from contracted farmers in Fushimi, and for beef, we even visit the ranchers to select the best cuts. Our seasonal and course dishes change monthly, allowing you to enjoy the flavors of the day without getting bored.
CHINON..La Diablesse '18 Chateau du Coulaine. For this month's pairing, we recommend the 'Veal Fillet Wiener Schnitzel Style' from Brittany, France. Brittany is the largest peninsula in France facing the Atlantic Ocean and is home to the famous tourist destination 'Mont Saint-Michel.' Dairy farming is also thriving here, and the 'Lughal' butter and cream cheese we use in our restaurant are local specialties. The 'Pre-Sale' lamb is a representative ingredient of this region, but the fillet of 'veal' raised here is characterized by its tenderness and refined taste without any gamey flavor. It is thinly pounded, breaded, and fried in olive oil in the style of 'Wiener Schnitzel,' served with a sauce of burnt butter and lemon-flavored 'Beurre Noisette.' This wine, made from 'Cabernet Franc' which has its origin in 'Brittany,' has a graceful yet firm quality that will create a pleasant pairing with the flavor of 'burnt butter'...

CHABLIS. Valmur '23 Jean Collet et Fils. A family-run producer that has been in operation since 1792, the year the First French Republic was established during the French Revolution. Jean has been involved in winemaking since 1952, and in 1954 began bottling and selling wine that had previously been sold to wine merchants, marking the start of Domaine Jean Collet. At Jean Collet, all wines, from Petit Chablis to Grand Cru, undergo fermentation with indigenous yeasts. All harvesting is done by hand. After harvesting, the grapes are quickly crushed and pressed, and fermented for 10 days in temperature-controlled stainless steel tanks at 18°C. The wine is aged for 10 months in 228L barrels from the Allier region, with a 10% usage of new barrels. Malolactic fermentation is carried out. This Grand Cru beautifully expresses classic Chablis, showcasing a brilliant golden color. It has aromas of ripe fruits like apricot and peach, with citrus nuances. There are notes of flint, vanilla from barrel aging, and a complex, rich flavor, yet the well-rounded acidity and minerality provide structure, bringing everything together. The refreshing breeze crossing Kamo, along with the pleasant crispness unique to Chablis, truly celebrates the arrival of this season...
