The Sea of Japan experiences significant changes in tidal flow depending on the season, which affects the quality of the fat in the Nodoguro based on where it was caught. Therefore, we carefully select Nodoguro with the optimal fat for each season. Please enjoy the sweetness and the unique flavor of the Nodoguro fat, which is refreshing and not overly rich.
We carefully select only the best live squid that have a good freshness and a beautiful transparency. The unique texture and elasticity, combined with a rich sweetness, will make you addicted.
