Mizusawa in Oshu City, Iwate Prefecture boasts one of Japan's rarest and highest quality brand beef. The sweetness and aroma of Mizusawa Beef can change your world with just one bite. At that moment, I felt a spark in my heart, saying, 'I want to deliver this excitement to Tokyo.' However, Mizusawa Beef is not meat that anyone can handle. From there, we began visiting the local area, listening to the producers' thoughts, and despite being turned down many times, we persevered for three years to finally build trust and bonds. The beautifully marbled, high-quality Wagyu beef from Mizusawa in Oshu City, Iwate Prefecture is truly a work of art! It has won the highest honor award six times at the National Meat Cattle Carcass Competition. Produced only in a limited area of Oshu City and consumed exclusively in Oshu City, it is a very rare and one of Japan's top quality brand beef that is hardly available in Tokyo.
The shock I experienced was similar to that of the beef tripe from grass-fed beef, which is rarely found in Tokyo, when I encountered 'Supreme Hormone' in Korea. This is a serious dish that exclusively uses the large intestine of grass-fed beef, where the fat bursts and the aroma rises. There are hardly any places in Tokyo where you can taste this. What we want to deliver is the emotion of that day, when 'delicious meat shakes a person's heart.' With that in mind, I am still holding the knife today and standing at the grill.
