This is a proud dish completed after the owner, who loves alcohol, walked around various restaurants and went through trial and error. It uses four types of offal: beef tendons, honeycomb tripe, beef omasum, and beef intestines, creating various textures such as tender and bouncy. The light finish is designed to fully bring out the flavor of the offal, making it a perfect match that makes you want to drink too much.
