The flavorful soba is nurtured by the cool climate and clear air and water, resulting in a firm texture and enhanced sweetness. This is a shop located at the end of a narrow road along the mountains. The interior is centered around an irori (a traditional Japanese hearth), and while there are many books and photographs, it feels cozy. It is certified as a 'Shinshu Soba Cutting Shop,' and you can enjoy handmade soba made from buckwheat flour produced in Nagano Prefecture. The homemade pickles are delightful, and the simmered dish with soybeans, herring roe, sakura shrimp, and evening gourd is also very delicious. The soba is thin and visually appealing, and when eaten with fresh wasabi or salt, its aroma and sweetness come through strongly. The vegetable tempura has a light and crispy texture, and the soba-yu jelly at the end allows you to enjoy the subtle fragrance of mulberry leaves.
