He sources ingredients daily from the Enshu-nada fishing port and also engages in agriculture. The restaurant is nurtured with local volunteers and attracts regular customers from all over the country.

He is passionate about Shizuoka ingredients. He has a hunting license and personally acquires ducks and wild boars. His unique technique of making soup stock and extracting flavor shines through in his cooking.
