I went to a shop located in a quiet village at the foot of Mount Chokai. It is a cozy space that has been renovated from a private home, and the style of taking off your shoes at the entrance and stepping up into the tatami room is very comforting. The menu is refreshingly simple, offering only handmade morisoba, and the aroma of freshly made soba fills the air. Although the noodles are thin, they have a firm texture, and perhaps thanks to the mountain spring water, their freshness stands out. The three types of pickles that come out before the soba have a gentle flavor that makes it hard to stop eating. The thin soba broth served after the meal also has a natural sweetness, and together with the tranquility of the mountains, it filled my heart.
