It seems to be the only Edo-style sushi restaurant in Hakodate. It seems that they are self-taught and have come this far, but the food is firmly Edo-mae, with a good balance of nigiri and other snacks, giving the impression that you have come here to eat sushi. The ingredients are mostly local and from Aomori, and the combination of originality and traditional techniques seems to work well. The nigiri is as good as any sushi restaurant in Tokyo, with firm rice, hokki-gai (shellfish), delicious Aomori tuna, Kitamura-saki sea urchin, Spanish mackerel (also from the Tsugaru Straits), and more. The owner's dignified knife work and nigiri attitude are also very pleasing, making this the best sushi restaurant in Hakodate.

You can enjoy locally caught seafood. You can enjoy blue crab and, in summer, tiger puffer fish. You can also enjoy kinki, spear squid, steamed abalone, button lobster, and more. The restaurant's alcoholic beverages include naturals, which is very rare. Wine and sushi go well together, so wine lovers and connoisseurs may want to give it a try.
