Mr. Kamikura is a sushi chef who trained at a renowned restaurant in Ginza and opened Nishiazabu Kamikura in 2011. He has a deep love and curiosity for sushi, and consistently invests painstaking effort in everything from selecting ingredients and preparation to forming each piece. While preserving the traditions of Edomae sushi, his technique and hospitality, which deliver pieces suited to modern tastes, are supported by many people.
