Chef's attention to detail! Let's go to a new restaurant from a friend! I was invited to go there! The former chef of Echora is now independent, The chef of Echora has opened a new restaurant, Aralde! It is located between Honmachi and Awaza. It has a gate and a very nice appearance. Once you enter the store, you will feel the warmth of the wood and the warmth of the interior. The aroma of firewood fills the store and it smells great~! There is a counter in the front and tables in the back. The spacious design makes you feel at home. The tables and chairs are full of the chef's attention. Only the 5,500 yen course is available. One of the guests was allergic to shellfish, but the chef was willing to accommodate us. We toasted with a glass of sidra! Sidra is a specialty of the Basque region, and this was the last time it was served from the barrel! We poured the sidra into the glasses with great gusto and let the aroma hit us! Visited also to celebrate the publication of Gault et Millau 2020. ◉Foie gras bonbon Cauliflower milk pudding ◉Hokkaido horse manure cloud peas Caviar Tuna from Himi, Toyama Oven-baked crab, a Basque specialty ◉Basque speciality: purusarda Amakusa sole with salsa verde sauce Tropical black beef ichibo from Kagoshima ◉Basque cheesecake 〜The following is reprinted from Go e Mijo 2020 I opened this restaurant in February 2016. The door with its impressive stained glass. When you take a seat at the counter in the warm space at the back, in front of you is an iron asador with a lid custom-made by an ironworks in Osaka. The restaurant uses charcoal and wood fires, as well as dead grape branches, to bring out the deep flavors of Basque cuisine with its unique aroma. In the colder months, the restaurant also incorporates simple traditional Basque dishes such as pulsarda and pilpil. The famous dessert is a cheesecake made directly from the famous La Vina cheesecake. The surface of the cheesecake is well browned, and its aromatic flavor enhances the soft and elegant sweetness of the inside. The passion and craftsmanship of the cheesecake cheesecake chef is a wonderful example of his desire to share Basque food culture by incorporating Japanese ingredients.
