Old Man's Teppanyaki

At the center are beautifully marbled Japanese beef, lobsters, and abalone, among other gifts from the sea. By skillfully manipulating temperature differences on a thick iron plate, we achieve a crispy exterior while keeping the inside moist, trapping the juices and sweetness. The layers of flavor created with homemade ponzu, rich red wine sauce, various salts, and citrus fruits vividly highlight the contours of the ingredients. For the finale, we offer fragrant garlic rice, seasonal clay pot rice, and piping hot soup finished on the iron plate. We also provide carefully selected wine, sake, and Taiwanese tea pairings to further enrich the story of each dish.
