This is a luxurious course that allows you to fully enjoy our specialty Jidori chicken, Aomori Shamorock. The course begins with cold tofu with oboro tofu, white meat with Chinese dressing, five kinds of seasonal sashimi, and Yuya salad, and also includes the famous fried chicken wings. The menu also features a wide variety of chicken dishes, such as charbroiled shamorock thigh meat, hearts and liver skewers (with sauce), and special tsukune (skewered chicken meat with sauce). For the main course, you can choose from "chanko-nabe" or "sukiyaki-nabe. Enjoy a special moment with udon noodles and a seasonal dessert to finish off the meal.
【Commitment to 'Salt'】 For items like 'skewers', 'tempura', 'chicken sashimi', and 'fried chicken', we provide 'salt' in addition to the dipping sauces like tempura sauce and soy sauce. The salt used at Yuka is a blend of two types of mineral-rich natural salts, carefully mixed in an exquisite ratio based on numerous tastings. The 'red salt' from Bolivia is an additive-free rock salt that is simply crushed, rich in minerals, particularly iron and calcium, with a characteristic soft sweetness. The 'sun-dried pure sea salt' from Vietnam is crystallized solely using the sun without any kiln processing, ensuring that it is not only rich in minerals but also calculated for its flavor release. By blending these natural salts, ground in a stone mill, in a unique ratio, we aim to maximize the inherent flavors of the ingredients while providing a synergistic and delicious experience.
This dish features a light Chinese soba made with a broth cooked from Shamorokku chicken bones and uses the original tare from Men Takumi Yuka Saginuma. The only topping is chopped green onions‼️
Please enjoy it simply with coarse salt and homemade mayonnaise.
