Fresh black-haired Wagyu honeycomb tripe slowly simmered with aromatic vegetables and tomato sauce.
A bouillabaisse made with luxurious seasonal seafood. A rich soup enhanced with the aroma of saffron. Note: The photo shows a serving divided for one from an order for two.
The photo features Shapon chicken from Kagoshima Prefecture, along with other recommended meats such as aged Amu pork from Hokkaido, all grilled over binchotan charcoal in front of the customers.
We always have 2 to 3 types available, made with care by a former Italian chef who will ask for your preferences.
The Goto-produced Sawara is carefully bled to the capillaries and processed with nerve technique, then gently grilled on an iron plate, served with lily root puree and sautéed lily root.
Spaghetti with Sanriku oysters, concentrated umami, garlic, olive oil, and peperoncino. Finished with plenty of Sicilian bottarga.
Mapo made with flavorful oysters and fluffy cod milt, finished with just the right amount of spiciness♪
Fluffy simmered eel, homemade salmon roe, and simmered egg. Perfectly pairs with sake!
