Born in Ehime Prefecture, Mr. Hiraishi developed an interest in cooking at an early age, and after studying at Tsuji Culinary Institute, he decided to pursue a career in Japanese cuisine. During his apprenticeship, he volunteered to work in the most demanding environment to hone his skills, and later opened his own restaurant, Tempura Hiraishi. He offers his own unique tempura dishes that make the most of seasonal ingredients imported from all over Japan. He also pursues new ways to enjoy food, such as proposing a marriage between wine and tempura.
