It is a small shop quietly located in a residential area of Toyohashi, but when you open the door, a lively counter welcomes you. There are a few seats at the counter where you can see the cooking right in front of you, and just one table, all managed by the chef alone. On this day, in addition to the chef's choice, we ordered a few à la carte dishes, and I particularly enjoyed the fluffy anago (conger eel) sushi and the grilled oysters infused with the aroma of kelp. The fresh seafood is abundant in variety, and the texture of the freshly filleted rockfish and red clam brought a smile to my face. There is also a rich selection of sake, including famous sake from Aomori and umeshu (plum wine) made with sake, which pairs excellently with the dishes. Although it is a bit far from the station, I felt it was worth the trip to enjoy the seasonal flavors that are crafted with care.
