The salt version of Chinese soba features a seafood-based soup, while the soy sauce version has a double broth made from chicken and seafood, with toppings also refreshed. The soy sauce version includes pork belly, pork loin, and low-temperature cooked chicken chashu. Additionally, to allow you to savor the Chinese soba more deeply, we provide a special original soup developed by Mugi no Hoshi, which extracts umami solely from various ingredients, in a single sip. 【What is Mugi no Hoshi's special soup?】 The main components of Mugi no Hoshi's special soup are: ♦︎ Shellfish (succinic acid) ♦︎ Vegetables (glutamic acid) *Role of the special soup: By drinking a sip of Mugi no Hoshi's special soup before your meal, it prepares your oral environment to better perceive the umami of the Chinese soba (promoting the secretion of mucous saliva). The mucous saliva secreted by the umami components such as succinic acid from shellfish allows you to enjoy the Chinese soba in a well-prepared oral environment, enhancing the deep flavors of the multiple types of niboshi (inosine acid) and Rishiri kombu (glutamic acid, aspartic acid) that form the core of the soup, creating a synergistic effect in flavor. *Glutamic acid, when combined with inosine acid, increases umami by about 7 to 8 times, and by deliberately separating succinic acid and allowing it to merge in the mouth, further synergistic effects of umami occur.
