In the course of his culinary career, he made up his mind to "become independent at the age of 29" and realized his dream. The name of the restaurant, "Ichizu Isshin" was inspired by the book "Ichizu Isshin, Tugu Jinsei wo Tsunagu" written by Atsushi Amano, a cardiac surgeon, and represents his belief in "being dedicated and single-minded". Chef Usui says, "If you are a chef, you should become an independent owner. While cooking, Chef Usui passionately discusses his own experiences and philosophies, and is as single-minded and dedicated as his restaurant name implies. His passion is reflected in each and every dish he prepares.
