Hakata Gokuji Duck Hakata Gokuji Duck" is raised in a spacious chicken coop in the mountains of Yame, eating handmade fermented feed and seasonal fruits and vegetables in a lush environment with clean air, water, and greenery. The ducks are raised without any synthetic feed, hormones, antibiotics, or drugs, and are known for their rich flavor and lack of odor as they are raised on nature's bounty. This dish can be enjoyed as an add-on to the cooked meat hot pot course (reservation required). The sea bream is freshly harvested in Kyushu. It is served with "sea bream thin-sliced", which has a firm flesh and refined flavor, "Mataichi salt" made by cooking seawater from Itoshima in a flat-boiler, "Kita-Ijun moromi soy sauce" naturally brewed and aged for four years, and "Kinzuta's special five-year aged plum soybean paste".
