The official name is 'Huevos Rotos', which means broken eggs. It is eaten by breaking the yolk of a fried egg on top of potatoes and mixing it all together. It is not well known in Japan, but in Spain, it is a well-known soul food.

Hachinosu refers to the second stomach of a cow. It is thoroughly braised with onions and paprika powder, and includes chorizo and chickpeas.
