Red meat, medium fatty, and chopped tuna. The Ise tuna used in our restaurant comes from Kamimaeura in Minamiise Town, which is located in the northeastern part of the region. The fishing ground, where warm Kuroshio current mixes with mineral-rich seawater from the Kii Mountains, has a low seawater temperature in winter, resulting in less excess fat and a firm texture.

Regarding our sushi rice, at Sushi Place Kaku, we use not only red vinegar commonly used in Edomae sushi but also a 3-year brewed red vinegar made solely from sake lees and pure rice vinegar sourced from Okumino, resulting in our unique 'Nagoya sushi rice' with a distinct sweetness characteristic of Nagoya. We procure our ingredients daily to ensure they are tastier than the 'toppings' and safe to enjoy. Our rice is fluffy, with the aroma of Ehime, enhancing the toppings. Our blended vinegar is focused on deliciousness and health. Our soy sauce is fragrant, emphasizing the umami flavor that highlights the ingredients.
