We assemble our dishes with the season in mind. We offer a soup using broth made from tuna and bonito flakes, fresh sashimi with fatty fish, and a full-course meal centered around fish. The full-course meal is centered around fish, and includes dishes such as hacusun, which is a small assortment of seasonal dishes. For the rice dish, we carefully select the best brand rice of the season and polish it every morning at the restaurant before serving.
We use today's carefully selected ingredients to create a supreme course. We serve soup using broth made from tuna and bonito flakes, and fresh sashimi with fatty fish. We also offer a dish using specially selected wagyu beef for the grilled dish. For the rice dish, we carefully select the best brand rice of the season and polish the rice every morning at the restaurant to make the earthenware pot takikomi-gohan.
