The rare domestic prosciutto by Hiroshi Ojima, the father of domestic prosciutto. Mr. Ojima started making domestic prosciutto in 1977, before the import of prosciutto was allowed in Japan, and laid the foundation for Japanese prosciutto. He makes it using only salt, without any additives like sodium sulfite, and removes the blood by hand while taking off the bones found in Spanish prosciutto. The pigs used are carefully selected from across the country, and each one is distinguished during the preparation, making it a truly rare prosciutto akin to haute couture.
The current season features pistachio and caramel nuts.
The tasting by the hall staff features over 1500 varieties each year. From this selection, we will choose the best options according to your preferences. Glass wines range from approximately 1100 yen to 3080 yen, and bottle wines range from approximately 7150 yen to 100000 yen, offering a wide price range from daily wines to slightly richer wines. The types of wines may change depending on the supply situation, so the wine list may not be very reliable. If you let us know your budget and taste preferences, we will pick some options for you.

Customers who order the course will have a 4glass wine pairing prepared to match the dishes. 60ml is recommended for those who enjoy tasting in small amounts.

Although it does not have a special grade label, it is a rich highball made with old bottle Scotch whiskey.
We want those who are not fond of alcohol to enjoy as well, so we will enhance our non-alcoholic options. Non-alcoholic pairing drinks are prepared with YOILABO. The non-alcoholic wine is selected from French varieties. The alcohol is removed after the wine is made. All of our grape juice uses grapes intended for winemaking. Naturally, no flavorings or additives are included, so please enjoy the original aroma and taste of the grapes.
We also offer sweet wines (Sauternes, Port wine), liqueurs, and brandies (Cognac, Armagnac, Marc, Calvados).
