We use only the ingredients that we have fallen in love with after visiting producers throughout Japan. This special dinner includes 4 dishes with seasonal ingredients only available at our restaurant, 7 dishes of seasonal fish and shellfish directly from Nagahama Market and tempura of vegetables directly from producers, and handmade juwari soba noodles and sweet dish made from buckwheat flour to finish. Enjoy soba noodles and dishes in the Sobaraku course.

Douzuki (pounded buckwheat) Soba is made by soaking the buckwheat in low-temperature water for two days without milling, and then kneading it directly into dough using a pestle-pounding machine. This is a unique method of making buckwheat that breaks through more than 400 years of milling technology and does not use a stone mortar at all. It is a rare and exquisite buckwheat noodle with a rich aroma and sweet taste.
[Limited to 5 servings] Fukudome Small Farm is located in Kanoya City, Kagoshima Prefecture. It is a small family-run farm where they raise 'Saddleback' pigs. Their motto is 'Straightforward, careful, and taking time and effort.' This is a legendary pig known for its tenderness and flavor, with fat that melts even at body temperature.
