Junmai Daiginjo Seiryu. This sake comes from Sakata City, a town with seven sake breweries in the northwestern part of Yamagata Prefecture, founded in the third year of the Tenpo era. It is made by polishing the Yamagata Prefecture's original sake rice, Dewasansan, to 50%, resulting in a transparent and refreshing flavor.
Heiwa Shuzo, which was formerly known as Choganji Temple, is featured in the book 'Kii Zokufudoki' about pure rice ginjo. Kido focuses on a restrained aroma and a gentle mouthfeel, creating a flavor that complements food. The pure rice ginjo sake, made by combining the king of sake rice, Yamada Nishiki, with Association No. 9 yeast, results in a drink that has a subdued aroma and a mild umami.
Junmai Ginjo, established in Taisho 11. This area has been blessed with abundant spring water, named after three ancient wells. The koji-making process remains unchanged since the establishment in the Taisho era, using the traditional lid koji technique. Although it is a very labor-intensive method, the strong koji produced through meticulous koji handling is its charm. It features a gentle ginjo aroma, crispness, and a smooth, expansive flavor.

Surrounded by deep forests and numerous clear streams, the Hakushu Distillery was built under the concept of a 'Forest Park Factory' in Hakushu, a place where the distillery can fully utilize the blessings of Japan's nature for whiskey production. With a vast area of approximately 820,000 square meters, the distillery was constructed with the utmost priority on harmony with nature. A glass enjoyed while feeling the scent of the forest is the best glass.
Founded in 1608, it is said to be the oldest distillery currently in operation in Ireland. While adhering to the traditional Irish whiskey method of triple distillation, it does not use unmalted barley, which is commonly used in Irish whiskey, but instead blends 100% non-peated malt whiskey with light grain whiskey. It offers a smooth mouthfeel and a flavor reminiscent of fresh fruits.
Located in Wick, the northernmost distillery on the Scottish mainland in the North Highlands. Established in 1826.
