The most beloved classic dish in Vietnam, 'Sao Sa Otto (Stir-fried Lemongrass)', has been expressed at the treasure of Lake Hamana, 'Deshiko'. The refreshing citrus aroma of lemongrass and the spiciness of chili are the essence of Vietnamese cuisine. This flavor enhances the thick texture and the elegant sweetness of fat, which are the greatest features of Deshiko. Originally a technique to soften the peculiarities of ingredients, it has evolved to eliminate the heaviness of fat by pairing with the non-smelly Deshiko, allowing the pure umami to be lightly sublimated. The wisdom of tradition breathes new life into 'Deshiko', creating a dish filled with exotic happiness.
