Seasonal menu item. This is a miso oden only. The dashi is primarily made from dried small fish such as sardines and mackerel, featuring Hiroshima-style and Setouchi-style dashi. During the war, due to a lack of fuel, fishing at sea became difficult, and bonito was unavailable, so small fish caught nearby were used instead. We have been making dashi this way every day since then. The dengaku uses white miso from Hiroshima, and the miso is adjusted by breaking the dam of miso to enhance the flavor. The rice is cooked with matcha. The traditional finish for oden is either rice with chopped daikon leaves or matcha rice. At Gonbei, we serve matcha rice because the first generation trained in Kyoto. You can also pour dashi over the rice and enjoy it like chazuke. This became popular after the first president of a representative company in Hiroshima was seen eating it this way. Please ask in the store for more details.
