The sirloin uses A5 rank black-haired Wagyu. The sirloin is the highest quality cut of beef and is the only part of the beef that has been awarded the title 'Sir.' It is characterized by its tenderness, sweetness, and abundant juicy marbling. It has little sinew and is delicious, with low fat content and red meat.
