We carefully simmer the chicken bones of 'Amakusa Daisuke' for long hours every day, diligently removing the scum and adding water as we cook. This process breaks down the chicken bones into fine pieces, allowing the marrow to dissolve into the soup without waste. We consistently maintain a fresh taste every day. The seasoning of the soup is a product of trial and error that pursues the characteristics of Amakusa Daisuke. It is a secret technique that is not available outside our shop.
We use a special sauce that has been perfected through countless trials and errors to achieve a satisfying flavor. Additionally, we grill the ingredients evenly and quickly using binchotan charcoal, which creates an infrared effect that coats the surface of the ingredients. As a result, the juices are concentrated within the ingredients, creating a perfect texture that is crispy on the outside and fluffy on the inside.

The 'Amakusa Daisuke' that was raised in the Amakusa region of Kumamoto from the Meiji era to the Taisho era became extinct in the early Showa period. Therefore, the Prefectural Agricultural Research Center Livestock Research Institute has been working on the restoration of this legendary chicken since the fourth year of Heisei, and it has finally been revived after half a century.
The 'Rusutsu Yotei Pig' refers to pigs raised in the clear spring water from the snowmelt at the foot of Mount Yotei in Rusutsu Village, Hokkaido. They are fed only pure plant-based feed rich in wheat, resulting in a brand of pork that is characterized by its low odor and rich, sweet-tasting fat.
This is the authentic taste that combines 'freshness, safety, and deliciousness.' The secret lies in the consistency from production to sales. The fertilizer is homemade, and the straw and grains are produced by contracted farmers. We prioritize 'certain quality' above all, ensuring that customers can enjoy it with peace of mind.
