Hakata Mizutaki is one of the traditional hot pot dishes originating from Hakata, characterized by a milky white soup that concentrates the natural umami of chicken, offering a simple yet deep flavor. Its roots trace back to the Hakata festival, Gion Yamakasa, during which the consumption of four-legged animals was prohibited, leading to the popularity of Mizutaki as a source of nutrition for the men carrying the floats, and serving as a communication tool to strengthen bonds while gathering around the dish. Even today, it is customary to enjoy Mizutaki during the festival's post-ceremony gatherings, and it continues to be passed down as a traditional food.

This dish is healthy and gentle on the body, using plenty of fresh chicken and vegetables from Kyushu, ensuring a good nutritional balance.

One of the charms of hot pot cuisine is the style of enjoying it together. The flow of progressing through each pot feels as if you are having a course meal, allowing you to enjoy the changes in flavor until the very last drop.
